Italian Eggs Recipe

On Wednesday I mentioned on my Facebook page that I have family here visiting from the east coast and as I type I’m looking out over the St. Helena mountains from Calistoga. Chico has been a heat and smoke basin, thanks to the multiple fires that have been burning in northern CA so to get some reprieve from the nastiness, we snuck off to wine country for the weekend.

Before we left town, I got the chance to cook a couple of meals for my family, and yesterday morning, thanks to the abundance of zucchini and fresh tomatoes from my CSA, I made a huge pan of Italian eggs which we gobbled up before heading out to our weekend retreat.

Here’s how I made this delicious dish – the measurements are approximate because it’s really hard to mess this meal up so feel free to experiment with ingredients and amounts.

Italian Eggs

1 small yellow onion, halved and sliced

2-3 small zucchini squash, halved and sliced

4-5 large tomatoes, diced

3 garlic cloves, minced

A big handful of fresh basil, chopped

About 1/2 cup chives, finely chopped

Salt and pepper to taste

12 eggs (more or less depending on how big your skillet is or how many people you are feeding

Cooking oil of your choice (I used bacon grease)

1. In a large skillet, heat the oil of your choice over medium and saute the onions until translucent.

2. Add the zucchini, tomatoes, and garlic and bring to a simmer.

3. Let the tomato mixture simmer, mixing occasionally until it begins to thicken.

4. Add the basil, and a little bit of salt and pepper, stir and taste and season more if desired.

5. Make little holes in the sauce with your spoon and crack an egg into each hole.



6. Sprinkle the whole dish with chives, turn the heat down to low or medium-low, cover and let the eggs cook until the whites are done but the yolks are still runny (about 5-8 minutes depending on how much sauce or how many eggs you cram into the skillet). Cook longer if you want your eggs cooked all the way through.

7. Scoop out an egg or two for each person, and enjoy!! We ate ours with some pastured bacon.

Sausage, Egg and Sweet Potato Breakfast Skillet

As all of you moms and dads out there can imagine, most of my mornings consist of me rushing around the house getting kids dressed, making lunches and trying to get some food in everyone’s bellies before we all head out of the house for the day. During the week breakfast normally looks like scrambled eggs and fruit in multiple varieties, because let’s face it, it’s fast and easy. Thankfully everyone in my house likes scrambled eggs so I don’t get many complaints, but when the weekend rolls around I take advantage of the extra time we all have together and try to make something more special and fun and…well…YUMMY!

This breakfast skillet is SO good and even though it takes a bit more time to prepare it really is quite easy. I have made this dish on several occasions including one of our camping trips last summer. It was a huge hit! Most of my family and friends are not on the Paleo bandwagon so they were very intrigued by my use of sweet potatoes in a breakfast dish. They all looked at the concoction with questions and interest and then dug right in! Everyone loved it because come on…what’s not to love!

Sausage, Egg and Sweet Potato Breakfast Skillet

5 cups sweet potato, grated

1 cup yellow onion, chopped

1 clove garlic, crushed

1 pound ground pork breakfast sausage

Sea salt and fresh ground pepper to taste

6 egg

2 Tbsp coconut oil

Sliced avocado (optional)
Preheat oven to 350 degrees
Turn stove on medium high heat and melt 2 Tbsp coconut oil in a cast iron skillet.
When the oil is hot add onion and cooks onion until soft and translucent. Add garlic and cook for another minute.
Add sausage to onion in skillet and cook until the sausage is cooked through and crumbly.
Add grated sweet potato, salt, and pepper to onion and sausage mixture, continue cooking until sweet potato is soft and just cooked through, 3-4 minutes. Stir frequently. Sweet potato should still hold its grated appearance and not get mushy. Be sure not to overcook as the mixture will have more cook time in the oven.
When the mixture is cooked through, turn off heat.
With a spoon create 6 wells in sweet potato and sausage mixture. Crack 1 egg into each well.
Place skillet in oven for approximately 5-8 minutes depending on desired firmness of your egg.

To serve, scoop onto a plate and garnish with sliced avocado.

Spinach and Salmon Salad with Arugula Pesto

Arugula is probably one of my favorite greens. There is something about that peppery taste that I LOVE and I was excited to try out a pesto with arugula as the base.  All of the flavors of this spinach and salmon salad blend together so well and it’s a wonderful light and fresh summer meal for lunch or dinner.

Note: You will notice the inclusion of green beans in this salad. I realize that this vegetable/legume is debatable on the Paleo diet. I eat them; but if you don’t then please just simply exclude from the recipe or replace with another vegetable of your choice.



Arugula Pesto

2 cups packed fresh arugula
1 clove garlic
¼ cup walnuts
½ cup olive oil
Salt and pepper to taste
In a food processor, blend the arugula, garlic, and walnuts until finely chopped. With the machine running, gradually add the olive oil, processing until well blended. Transfer pesto to bowl and stir in salt and pepper to taste. Pesto can be made a couple days in advance, just cover and refrigerate!

Salad

3 cups spinach
2 cups micro greens
1 cup shredded cabbage
1 carrot shredded
1 cup chopped green beans
½ cup pepitas

For green beans: steam until al dente and then run them under cold water until cool. Chop into bite size pieces
Combine all ingredients in a bowl, Add 4 Tbsp of pesto and toss greens until well combined. Place in refrigerator or set aside while you prepare fish.

Salmon

2 Salmon Filets
Salt and Pepper
2 Tbsp Arugula Pesto

Salt and pepper both sides of salmon fillets and lay on baking sheet. Top each fillet with 1 Tbsp of arugula pesto and spread over the top. Cook the fish under a broiler for approximately 5 minutes (depending on how thick filet is) or until fish is flaking and opaque.
